Thai tuna power bowl
This colorful and flavorful Thai Tuna Power Bowl is easy to make and perfect for a healthy weekend lunch!

Drain the chickpeas and rinse them well with water. Gently pat them dry with paper towels. Mix the chickpeas with olive oil and spread them on a baking sheet lined with parchment paper. Roast the chickpeas in the preheated oven at 180-200°C for 25 minutes. Season the roasted chickpeas to taste.
Prepare the quinoa according to the instructions on the package and place it at the bottom of the bowl.
Add the spiralized zucchini noodles, carrot, cabbage, roasted chickpeas, and drained Skipjack tuna.
Sprinkle with coriander and add as much Thai dressing as desired.
