

Tuna burger with green curry
Straight from Westport, Washington, where Albacore tuna is caught, Bart makes fresh tuna burgers with green curry. The refreshing lime mayonnaise completes the dish!

Set the grill to medium-high heat.
In a bowl, mix the green curry with the tuna cubes. Add the scallions and the zest and juice of half a lime. Finally, add the panko and mix until you get a firm texture. Set aside.
Brush the vegetables with some olive oil and season with salt to taste. Grill for 5-6 minutes on both sides. Meanwhile, mix the mayonnaise with the zest/juice of the other half of the lime. Set aside.
Divide the mixture into two equal balls. Flatten them to form burgers. Brush both sides of the burgers with olive oil and season with pepper to taste. Heat the grill pan or frying pan over medium-high to high heat. Grill the tuna burgers for 3-4 minutes on each side, depending on thickness. Grill the burger buns during the last minute.
Spread one tablespoon of lime mayonnaise on each bun. Top with a handful of arugula, followed by the grilled vegetables, and finish with the red onion. Enjoy!
