    Octopus salad

    In Southern European countries, pulpo—or octopus—is considered a true delicacy. And honestly, we get it! Octopus pairs perfectly with crisp, fresh veggies and a generous splash of extra virgin olive oil.

    Preparation method:
    1

    Place the potatoes in a pot of cold water and bring to a boil. Reduce the heat and simmer for 15-20 minutes until tender. Let cool and cut into smaller pieces if needed.

    Combine the octopus with the potatoes, tomatoes, olives, green onion, and capers.

    3

    Drizzle with olive oil and lemon juice, season with salt and pepper, and garnish with fresh basil leaves.
